And today for Easter dinner I went all out: lamb chops, risotto, asparagus.
For the lamb I used this recipe. The lamb came out a bit on the rare side, so next time I’ll cook the chops for longer than 2 minutes per side. Although undercooked meat certainly beats overcooked meat. In addition, I agreed with the commenters that the balsamic glaze didn’t really do much for the dish. So next time I’ll take their advice and use pomegranate molasses.
For the risotto I used this recipe. Since many risotto recipes call for parmesan cheese and some of us are around cheeseophobes, it’s a pretty tasty alternative and will be a standby for me.
Next time I’ll roast the asparagus like the recipe above recommends; I didn’t want to bother turning on the oven so I just steamed them on the stove top.
