This weekend I got to celebrate two holidays, Passover and Easter! Although I was bummed to miss Matt’s Wednesday night Passover seder with his family (stupid Security Analysis presentation), I got to join the annual seder he has with his friends. It was my third annual friend seder, and each year I’ve made coconut macaroons from the King Arthur Flour Cookie Companion. Next year I may be tempted to experiment with this recipe for chewy amaretti cookies, which also appears to be KFP (Kosher For Passover… i.e. no flour is used), and the output resembles classy French macarons. However, the coconut ones I’ve made each year always receive rave reviews and are super easy to make. Recipe to follow.
