I haven’t written for a long time about what I’ve been cooking. Because… since returning from Argentina I’ve made just one dish, this Martha Stewart Chicken and Israeli Couscous with Tomato and Lemon recipe I found on The Bitten Word. I made this the day after I got back, actually, and think I was still jet-lagged, because I forgot to add the saffron that I had purchased specifically for this dish, as well as the frozen peas. That may have been Freudian, actually, because I really don’t like peas. This dish was ok as it was, but too brothy. That may (or may not) be improved with the addition of frozen peas. I did appreciate the bright, clean flavor that the lemon added. If I made it again, I would also experiment with using bone-in chicken, which makes for a lovelier presentation, as shown in this YumSugar feature.
Since the chicken with Israeli couscous dinner, two weeks ago (gulp!), I’ve been working my way through freezer leftovers, as well as eating out entirely too much. I’m hoping to get to Fairway this week if all goes well. Otherwise, I could have another situation like this on my hands.
