Locro
This is a traditional hearty stew native to northwestern Argentina. It contains beef or chorizo and vegetables like beans, corn and squash. Locro is intended to be a winter dish, but although it was technically summertime and we were sitting in an unairconditioned restaurant-cum-music venue (La Peña del Colorado), Matt decided to order it on a friend’s recommendation. And I am very jealous, because it was delicious, and I only had a few bites. I am, which can sometimes work against me, a cumpulsive differentiating orderer (no two people can order the same thing!). My dish was fine (a beef/lentil stew), but I should’ve gotten the locro. Lesson learned. Also, from what I have been reading, Ecuardorian/Peruvian locro is typically more of a cheese and potato soup. I’m going to try to make the Argentine version at home.
